Butternut, tomato and harissa

Ingredients

  • 1 kg Ardo Butternut
  • 100 g Ardo Onion cubes
  • 10 g Ardo Parsley
  • 500 g Tomato cubes
  • 10 g Ardo Garlic cubes
  • 50 ml olive oil
  • 200 ml vegetable bouillon
  • harissa
  • salt and pepper

Preparation

  1. Add the onion cubes and garlic to the olive oil.
  2. Add the tomato cubes and bouillon and simmer gently.
  3. Season with salt, pepper and harissa.
  4. Add the butternut and simmer until you get a nice finish.
  5. Finish off with parsley.
