Ingredients

  • 600g Ardo Red Onion
  • 1tsp Ardo diced garlic
  • 1tsp Ardo thyme
  • 1 bottle (Belgian) blond beer
  • 1.5L beef bouillon
  • 125g sliced goat cheese
  • A few slices of baguette
  • Liquid honey
  • Salt & pepper

Preparation

  1. Sauté the onion and garlic together in a knob of butter on low heat.
  2. Pour the beer over the sautéed onion and allow it to cook dry.
  3. Then add the beef bouillon, bring it to a boil, add the thyme and let the soup simmer gently until the onion is tender.
  4. Season with salt and pepper.
  5. Cover several slices of baguette with sliced goat cheese, sprinkle with honey and place them under the grill until the cheese is golden brown.
  6. Serve immediately.
