Scandinavian-style poke bowl with bulgur and salmon

Ingredients

  • 3 kg Ardo Bulgur
  • 100 g Ardo Wakame
  • 300 g Ardo Sugar snaps
  • 300 g  Ardo Broccoli
  • 300 g Ardo Green asparagus
  • 200 g Ardo Edamame soybeans
  • 250 g Ardo Scandinavian-style herb mix
  • 20 radish
  • 200 ml yoghurt
  • 100 ml mayo
  • 300 g smoked salmon fillet
  • 1 tbsp sunflower oil
  • 100 ml olive oil
  • Lime juice
  • Lime zest

Preparation

  1. Stir-fry the bulgur and wakame in some sunflower oil, and season with salt and pepper.
  2. Mix half of the Scandinavian-style herb mix with the yoghurt and mayonnaise, and season with salt and pepper, lime juice and zest.
  3. Steam all vegetables briefly and allow to cool immediately.
  4. Marinate the smoked salmon in the olive oil and the rest of the Scandinavian-style herb mix.
  5. Slice the radishes.
  6. Arrange everything in a bowl and top with the yoghurt dressing.
